Poached Pears with Caramel Drizzle

Ingredients:

4 ripe but firm Bosc or Anjou pears, peeled and cored

1 lemon, sliced

4 cups water

1 cup granulated sugar

1 cinnamon stick

2-3 cloves

1 star anise (optional)

1 vanilla bean, split lengthwise (or 1 teaspoon pure vanilla extract)

1/2 cup Coop's salted caramel sauce

1 cup mascarpone cheese (homemade or store bought)


Instructions:

1. Prepare the Poaching Liquid:

In a large pot, combine the water, sugar, lemon slices, cinnamon stick, cloves, star anise (if using), and the seeds scraped from the split vanilla bean (or vanilla extract). Bring the mixture to a gentle simmer over medium heat.


2. Poach the Pears:

Gently add the peeled and cored pears to the simmering liquid. Ensure they are fully submerged. Let the pears simmer for about 20-25 minutes, or until they become tender. To check for doneness, insert a knife into a pear; it should slide in easily.


3. Remove the Pears:

Using a slotted spoon, carefully remove the poached pears from the liquid and let them cool.


4. Assemble & Plating:

Place a spoonful of the mascarpone cream on each serving plate, spreading it out into a small bed.


5. Add the Poached Pear: Carefully place a poached pear on top of the mascarpone cream on each plate.


6. Drizzle with Coop’s Salted Caramel Sauce:

Generously drizzle each poached pear with warm caramel sauce.


7. Garnish with Pistachios: Sprinkle chopped pistachios over the pears for a delightful crunch and a burst of color.
